MAPLE GLAZED CHICKEN & SWEET POTATOES (taken from allrecipes.com)
INGREDIENTS:
1 1/2 pounds sweet potatoes, peeled and cut into 1-inch pieces 1 pound chicken tenders 2 teaspoons steak seasoning (such as | Montreal Steak Seasoning®) 2 tablespoons vegetable oil 1/2 cup maple syrup 1/2 cup sliced green onions |
DIRECTIONS:
| 1. | Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes, and set aside. |
| 2. | Sprinkle chicken tenders with steak seasoning; heat the oil in a large skillet over medium heat, and cook the chicken tenders until the meat is lightly browned and no longer pink inside, 5 to 8 minutes per side. Remove the chicken, and set aside. Stir the maple syrup into the skillet, scraping up and dissolving any browned flavor bits from the skillet. Bring to a boil, simmer for 2 minutes, and stir in the green onions. |
| 3. | To serve, place the mashed sweet potatoes onto a serving platter, top with the chicken tenders, and pour the maple sauce over the chicken. |
Living with my parents has been fun because I get to eat what I consider exciting foods without torturing Jon or wasting money. One of those perks is the fact that they subscribe to Farm Fresh To You and that little box of produce forces you to prepare some foods that you otherwise wouldn't choose. A couple weeks ago my parents had several sweet potatoes that needed to be eaten. I ran to my usual fave resource, allrecipes.com, and found this gem of a recipe. After cooking the "sweet potatoes" I opened them to find that they were actually yams. I went forward with the recipe anyway and it was really delicious. I nice way to spice up the humdrum of weekday chicken meals. Try it!

Carly - I am going to try this one -- even though my gut tells me my kids will have to try hard to get over the Montreal seasoning -- we like it, but used it to "season" our mummified chicken a few years ago :-) I'll let you know how it goes. Thanks for being faithful to post your favorite recipes on your blog -- I turn to your blog regularly while making our menu plan!
